Ingredients
For Mutton Marination
- 1 kg mutton (large pieces)
- 1½ cups thick yogurt
- 4 tbsp ginger-garlic paste
- 2 tbsp red chili powder
- 1 tbsp turmeric powder
- 2 tbsp biryani masala
- 3 tbsp lemon juice
- ½ cup fried onions
- Salt to taste
- ½ cup mustard oil
For Rice
- 1 kg basmati rice (soaked 30 minutes)
- 4–5 bay leaves
- 6 green cardamoms
- 4 cloves
- 2 cinnamon sticks
- Salt
- Hot water
For Layering
- ½ cup ghee
- ½ cup fried onions
- ½ cup milk mixed with saffron
- Green chilies
- Fresh mint leaves
Directions
Sultan Dines Kacchi is famous for its premium Kacchi Biryani, a traditional dish where raw marinated mutton is slow-cooked together with fragrant rice and spices. Unlike regular biryani, kacchi biryani uses uncooked meat and uncooked rice, allowing flavors to blend deeply during dum (slow steam cooking).

Mix Marinade in a large bowl. Add chicken and mix to coat well. Cover and marinate in the fridge for a minimum of 24 hours is ideal. If only 3 hours, add an extra 1/2 tsp salt.

Preheat oven to 220C / 430F (standard) or 200C / 390F (fan / convection) for. Choose a pan of a size such that the skewers will stay propped up on the pan walls (see photos in post or video) and the chicken will be elevated off the base. Line with foil.

Place the mixture into a loaf pan and cook in the oven for approximately 30 minutes or until the top is a light golden brown.
